     Ricardo Trillos and his wife Anelith created Cao Chocolates in 2009 while looking for dark chocolates made in Miami. They could not find good quality real chocolate created in this U.S. southeast city, filled with a "melting pot" on international people, and that is why they decided to do it themselves.

     Cao chocolate is the first artisan to offer single origin bean-to-bar dark chocolate made in Miami. Club Chokolate met them personally in the Miami International Chocolate Festival in 2016, carried in the Fairchild Botanical Gardens when our idea of a marketplace for fine quality chocolates was starting to take shape. Then we share our passion for chocolate, as local entrepreneurs, in the same event but in subsequent years.

     As fellow Venezuelans, Cao Chocolates and Club ChoKolate, we share the passion for the mostly "Criollo" cacao varieties in our country. The "San Sebastián Venezuela" bar brings us to our childhood! It is a single origin 72% dark chocolate that uses cacao beans from the north-central part of Venezuela, a region known for small batches of fine-flavor cacao. The packaging speaks simplicity and has just the required information for you to go straight and enjoy this dark chocolate. Like all their bars, you can immediately identify this bar's country of origin by looking at the Venezuelan flag colors. It also includes flavor notes, as well as the fact that it is "fair trade" and "fair for life" certified.

     Venezuela is the center of fine flavor cacao. Despite the political and economic difficulties that this country is going through at the time of this writing (2018), craft chocolate makers still find a way to find limited quantities of cacao to produce this unique dark chocolate. Cao is no exception! The flavor profile of cacao beans from Venezuela is immense to list here but commonly is linked with a wide range on fruits and nuts aromas and tastes.

     After opening this dark chocolate, you will see its "back," then turning it around will allow you to see the pattern which carries the Cao brand, easy to identify. Also, you will notice a lighter than expected brown color despite being a 72% chocolate. It has a relatively soft snap, light earthy aromas, and finally while melting in your mouth, nuts, and figs flavors. It has a smooth texture with a relatively long finish. We feel Venezuela in our mouth with this chocolate, and we are sure you will start to identify Venezuelan cacao flavors through this bar.
