The Story Behind the Bar Discover one of the rarest finds in the craft chocolate world. We are thrilled to offer this extraordinary 77% single-origin dark chocolate, sourced directly from farmer Vicente Caçep. For over 80 years, his family has meticulously cultivated cacao on their Hacienda Jesus Maria farm in Tabasco, Mexico.

What Makes "White Almond" Cacao So Special? Despite its rich 77% cacao content, you will immediately notice this artisan chocolate is surprisingly light in color. This is due to a rare, natural genetic variation where the cacao beans are completely white rather than the standard purple. This unique trait gives the bean its name: Almendra Blanca (literally translating to "white almond").

Ethical Sourcing & Farm-to-Bar Quality This exceptional bar is the result of direct, transparent sourcing. The artisan maker behind this chocolate discovered Vicente's farm during a trip to Mexico and was blown away by the quality of his operation. Vicente runs his own nursery to cultivate these unique white beans and personally oversees the fermentation and drying processes. To secure this exclusive micro-batch, the makers manage a complex customs and import process to bring these hand-selected beans straight to the United States.

Unmatched Craft Chocolate Experience What truly elevates this gourmet dark chocolate is the intensive crafting process. It is made using freshly pressed Almendra Blanca cocoa butter—a rarity, as very few chocolate makers in the country press their own cocoa butter in-house. This dedication to the craft results in an ultra-smooth, melt-in-your-mouth texture and a pure, unadulterated flavor profile you won't find in mass-produced chocolate.
