"Criollo" beans represent about 5% of the world's production. It is one of the three classic cacao varieties and considered to produced complex aromas and flavors. Currently, "Criollo" is one of the genetically-determined bean strains that originated in the Amazon, South America. This variety usually has "naked," fruity and floral flavor profile.
