In 2019, Denise—the talented chocolate artisan—journeyed to Peru to represent U.S. chocolatiers at the Cacao and Chocolate Salon in Lima. There, she discovered a fascinating native cacao thriving in the northern coastal desert of Piura, where the Amazon meets the desert at the Andes’ lowest point. Unlike typical rainforest cacao, this hardy bean thrives in a dry, arid climate, which brings out smooth flavors and fewer tannins.
