Meet your new favorite indulgence: a 70% dark chocolate crafted from beans grown by over 1,000 organic farmers in Western Uganda's Semuliki Forest region, where more than half the growers are women leading the charge in sustainable cocoa production. Pablo's signature light-touch roast (we're talking 1/5 on the intensity scale) lets the beans' natural magic shine through. Expect a delightful dance of ripe tropical fruits, honeyed warmth, and creamy milk chocolate notes that'll make your taste buds sing. The 2024 Batch 1 harvest, cultivated at a breezy 3,400 feet elevation, gets the VIP treatment: five to six days fermenting in linear boxes, followed by a leisurely six to seven days of sun-drying on raised wooden beds under greenhouse protection. The result? A beautifully balanced bar with moderate sweetness (4/5) that lets the origin's personality take center stage.
