Fruition Dark Chocolate

     Located in the beautiful Catskill Mountains of New York, "Fruition Chocolate Works" forms delicious cacao beans from around the world into dark chocolate works of art.  Founder Bryan Graham has always been passionate about food and chocolate. Beginning at an early age, he learned how to pick the perfect ingredients, transforming them into delicious desserts.  However, it wasn’t until he had the opportunity to make chocolate from bean to bar with Chef Peter Greweling that his love for dark chocolate was born.

         Fruition Chocolate process is much like other bean-to-bar companies.  Their quest for premium cacao beans means traveling anywhere between 20 degrees north and 20 degrees south of the equator. The beans they acquire originate from sources in locations like Peru, Costa Rica, Nicaragua, Bolivia, Ecuador and the Dominican Republic. Their brand of dark chocolate begins with a relatively simple process. Ripe cacao pods are cut down in the early morning and fermented in bins covered with burlap or banana leaves anywhere from three (3) to eight (8) days. The beans are then dried and infused with solar power before being cracked and removed from its shell. Bryan and his team, paying particularly meticulous attention to detail, slowly roast the cacao beans and then ground by stone. Next, the cacao beans are refined and conched then tempered and molded into their signature dark chocolate bars. The initial part of the chocolate making process takes approximately four (4) days after which each bar is then wrapped in special eco-friendly packaging, printed using soy and vegetable-based inks and designed by local design companies.

         Taking into account molding and packaging, the total process takes approximately ten (10) days.  While that might seem like an extended period of time, this is the kind of dark chocolate worth waiting for.

Honors such as 2015, 2016 and 2017 International Chocolate Awards, oh and it’s a five (5) time winner of the Good Food Award.  In 2017, Fruition Chocolate Works was considered one of the top eight (8) bean-to-bar dark chocolate makers around the U.S. by Zagat. In 2016, Men’s Health Magazine recognized Fruition dark chocolate bar to be one of the five (5) most delicious chocolate on the planet!
